  • 250g dried lentils, rinsed and drained

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 2 tsp ground turmeric

  • 1.4L vegetable stock

  • Salt and pepper to taste

  • Plain yoghurt for serving

  • Handful of coriander microgreens for garnish


  1. In a large pot, combine dried lentils, diced onion, diced carrots, diced celery stalks, minced garlic, ground cumin, ground coriander, ground turmeric, and vegetable stock.

  2. Bring soup to a boil, then reduce heat to low and simmer for 20-25 minutes until lentils and vegetables are tender.

  3. Season with salt and pepper to taste.

  4. Ladle lentil soup into serving bowls.

  5. Top each bowl with a dollop of plain yoghurt.
