Lebanese Grilled Chicken Shawarma Wraps with Micro Coriander

These Lebanese-inspired wraps feature tender grilled chicken shawarma, wrapped in warm wraps with fresh vegetables, creamy tahini sauce, and garnished with micro coriander for a burst of freshness and nutrition.

  • 1 lb boneless, skinless chicken thighs

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon ground turmeric

  • Salt and pepper to taste

  • 4 large wraps

  • Toppings: sliced tomatoes, shredded lettuce, thinly sliced cucumbers & red onion, tahini sauce

  • Handful of micro coriander or a coriander soup/sandwich topper mix


  1. In a bowl, combine olive oil, minced garlic, ground cumin, paprika, ground turmeric, salt, and pepper.

  2. Add chicken thighs to the marinade and toss to coat. Let marinate for at least 30 minutes.

  3. Preheat grill or grill pan over medium-high heat.

  4. Grill marinated chicken thighs for 6-8 minutes per side until cooked through and slightly charred.

  5. Slice grilled chicken into strips.

  6. Warm wraps on the grill or in a dry skillet.

  7. Assemble wraps by placing grilled chicken strips, sliced tomatoes, shredded lettuce, and thinly sliced cucumbers and red onion on each pita bread round.

  8. Drizzle tahini sauce over the filling.

  9. Garnish with a handful of your micro coriander/mix before wrapping.

Serving Suggestions: 

Serve wraps as a satisfying meal. Enjoy with a side of tabbouleh or fattoush salad.
