Eggs provide high-quality protein and essential nutrients, while microgreens offer a concentrated source of vitamins, minerals, and antioxidants. Goat cheese adds richness and tanginess, making this dish both delicious and nutritious.


Ingredients:


- 2 eggs

- Handful of microgreens (choose one or a mix: basil, rocket, chive or radish)

- 50g goat cheese, crumbled

- Salt and pepper to taste


Instructions:


1. Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.

2. Heat a non-stick frying pan over medium heat and pour in the beaten eggs.

3. Sprinkle your chosen microgreens evenly over the eggs.

4. Scatter the crumbled goat cheese over the microgreens.

5. Cook until the edges are set, then fold the omelette in half.

6. Continue cooking until the omelette is cooked through and the cheese is melted.
