Vietnamese Pho with Micro Coriander and Thai Basil Microgreens

Elevate your traditional Vietnamese Pho with the vibrant freshness of Micro Coriander and Thai basil microgreens. This aromatic noodle soup, rich in protein and nutrients, gets an extra burst of flavour and nutrition from carefully selected microgreens.




Ingredients:

  • 2 litres beef broth

  • 200g (approx) rice noodles

  • 8 oz beef sirloin, thinly sliced

  • 1 onion, thinly sliced

  • 2-inch piece ginger, sliced

  • 3 star anise

  • 3 cloves

  • 1 cinnamon stick

  • 1 tablespoon fish sauce

  • 1 tablespoon soy sauce

  • Salt and pepper to taste

  • Bean sprouts, fresh basil, lime wedges, and sliced chili for serving

  • Sprinkle of Thai Basil & Coriander microgreens for garnish

Microgreens Selection:


  • Micro coriander adds a citrusy freshness that complements the aromatic broth and enhances the overall flavour profile of the dish.

  • Micro Thai basil offers subtle anise-like notes, reminiscent of traditional basil but in a more delicate form, perfect for infusing each spoonful with layers of flavour.

  • Coriander microgreens are rich in vitamins, particularly vitamin C (ascorbic acid), which is essential for immune function and collagen synthesis. They also contain significant amounts of vitamin K, important for blood clotting and bone health**

Instructions:


  1. In a large pot, combine beef broth, sliced onion, sliced ginger, star anise, cloves, and cinnamon stick. Bring to a boil, then reduce heat and simmer for 30 minutes to infuse flavours.

  2. Meanwhile, cook rice noodles according to package instructions. Drain and set aside.

  3. Remove the aromatics from the broth using a slotted spoon or fine mesh strainer.

  4. Season the broth with fish sauce, soy sauce, salt, and pepper to taste.

  5. Divide cooked rice noodles among serving bowls. Top with thinly sliced beef.

  6. Ladle hot broth over the noodles and beef, ensuring the beef is cooked through.

  7. Serve pho hot with bean sprouts, fresh basil, lime wedges, sliced chili, and a generous sprinkle of your chosen microgreens on top.

Serving Suggestions: 


Customise your pho with your favourite toppings and condiments. Enjoy with hoisin sauce and Sriracha for added flavour.
