Welsh Rarebit Stuffed Mushrooms with Garlic Chive Microgreens

A delightful dish featuring Portobello mushrooms stuffed with Welsh rarebit mixture, baked until golden and bubbly, and garnished with fresh micro garlic chives for a burst of flavour and nutrition.

Ingredients:


6 portobello mushrooms

1 cup grated Welsh cheese (such as Caerphilly or Cheddar)

1/4 cup milk

1 tablespoon butter

1 teaspoon mustard (of your choice)

Salt and pepper to taste

Sprinkle of micro chives / micro chive mix


Instructions:


  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.

  2. Remove stems from the mushrooms and finely chop them.

  3. In a saucepan, melt butter over medium heat.

  4. Add grated cheese, milk, and chopped mushroom stems to the saucepan, stirring until melted and combined.

  5. Stir in mustard and season with salt and pepper to taste.

  6. Fill each mushroom cap with the cheese mixture.

  7. Place stuffed mushrooms in the prepared baking dish.

  8. Bake for 15-20 minutes until mushrooms are tender and cheese is golden and bubbly.

  9. Serve Welsh rarebit stuffed mushrooms hot.

  10. Garnish with a sprinkle of micro chives or a garlic chive mix before serving.


Serving Suggestions:


Serve 2 or 3 with a side salad for lunch for two or as a tasty appetiser for gatherings or parties. Enjoy with Welsh ale or a crisp white wine. The addition of garlic chive microgreens enhances the flavour and adds a fresh herbal note to the dish.
